Who like one pot meals? This girl! Why? Because while I love food, I also love convenience and I really, really hate doing the dishes (and by doing the dishes I mean loading and unloading the dishwasher). That’s why when I find a one pot meal (in this case 1 pan) that’s good, it immediately finds a spot in the old recipe rotation. I’m sure there are a few others out there that can appreciate the desire to make a great dinner without messing up the whole kitchen to do it. So without further ado, here’s my recipe choice of the week to share with you all, One Pan Asian Beef and Noodles:
What You Need
- 1.25 lbs ground beef
- (2) packages of oriental flavored ramen noodles
- (1) (16 oz) package of frozen oriental stir fry veggie mix
- 1/2 teaspoon ground ginger
- 3 tablespoon thinly sliced green onion
What You Do
In large skillet brown ground beef and drain. Add 1/2 cup of water and a little salt and pepper; simmer about 10 minutes and transfer to a separate bowl. In the same skillet combine 2 cups of water, veggies, noodles (broken up), ginger, and seasoning packets. Bring to boil and reduce heat. Cover and simmer roughly 3 minutes or until noodles are tender. Make sure you stir occasionally. Return beef to pan and stir in green onions. Serve right from skillet. Doesn’t get much easier than that!
