In my quest to eat a little healthier, but still keep my family happy with tasty vittles at dinner time, I’ve been on the lookout for new side dishes that fit the bill. Usually when having baked butternut squash I just halve it, bake it, and add some butter and brown sugar – delicous, but I thought this time I’d try something different. We went with this garlic parmesan version and let me tell you, it was uh-may-zing!! Super easy to make and definitely something that will be on the menu again in the very near future!
Ingredients
2 tablespoons minced fresh parsley
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1 whole butternut squash, peeled and cut into approx 1-inch cubes
1/3 cup grated Parmesan cheese
Directions
In an ungreased 2-qt. baking dish, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender. Coat with parmesan cheese.
