It’s no secret I’m a fan of pumpkin everything. I’m also a big fan of cheesecake. What I’m not a big fan of is baking. I do it and I’m pretty good at it, but if I can get by without it there’s no love lost. That’s why this No Bake Pumpkin Cheesecake recipe is really the perfect marriage. It’s quick and easy for a family dessert or for a holiday gathering. No matter when you decide to serve it, everyone is bound to love it and you’ll be the only one who has to know how easy it really is!
Ingredients:
1 8oz pkg. of Cream Cheese
½ of a 15oz can of Pumpkin Puree
3 TBS Sweetened Condensed Milk
2 C. Whipped Topping
½ tsp. Cinnamon
Lady Fingers
Whipped Cream (optional)
With this recipe, you can make different amounts of desserts! You can make one big parfait, or a few individual glasses. The amount you use will determine how many desserts you end up with.
Directions:
Using an electric hand mixer or stand mixer, beat cream cheese until smooth. Add in the sweetened condensed milk, pumpkin puree and cinnamon until well combined. Add whipped topping until incorporated.
Scoop pumpkin filling into a fancy glass. You can also put filling in a piping bag and pipe into glass. Top with lady fingers, whipped cream, and cinnamon (optional).
