What do you do when the snow has been coming down for over 12 hours straight with no sign of stopping? You call for an impromptu family movie night! It seems like we’ve been having those a lot lately and it’s true, we have, because it’s too darn cold to hang out outside and well, there have been some movies that I’ve been dying to see released lately.
Of course one never has everything they need when they need it so a trip to Wal-Mart it was to stock up on all the supplies to create the Perfect Popcorn Buffet and some deep fried Snickers Bites because what else would you eat when watching Sony Pictures War Room?! Of course one cannot have a complete Popcorn Buffet without my favorite Orville Redenbacher Movie Theatre popcorn. Okay weird things make me happy, but I love these new Pop Up Bowls! It makes serving so much easier! I personally love to throw some M&M’s in my popcorn becuase the sweet -n- salty combo is perfect! And, if one is going to indulge, what better to wash it down with than an ice cold Coca Cola? (I’m a diet girl…but hubby is a Classic Coke guy.) Now that is the perfect popcorn bar!
Now, the movie because of course we didn’t just stuff our faces on movie night! We watched Sony Pictures War Room. Now I’m not going to spoil it for you, because I hate it when people do that to me, but if you haven’t seen it, you really should. I will tell you, that you will probably relate to this movie in some way, shape or form. It’s about a middle class family with first-world problems and how a little bit of prayer and listening go a long way in finding happiness. That’s all I’m going to give you though so when you watch it, let me know what you think.
Remember those Deep Fried Snickers Bites I mentioned earlier? Since it is the season for giving, I’m going to share my quick and easy recipe (because y’all know quick and easy is the way I like it) for Deep Fried Snickers Bites.
Ingredients
(1) Pkg. Snickers Bites
Pancake Mix (whatever you have handy is fine)
2 cups coconut oil (vegetable or canola is fine as well)
Directions
Arrange Snickers bites on a cookie sheet on wax paper and put them in the freezer for about 30 minutes (otherwise they’ll melt the second they hit the hot oil)
Put the oil in your pan and let the oil heat up on a medium heat. (I use a pretty small one, but if you use a bigger pan, you may need to add a little more oil.)
Mix your pancake batter according to the directions on the box BUT, only use about 1/2 of the water required. You want your mix to be thick but not chunky so it sticks to those Snickers bites better.
Once the oil is hot coat your frozen Snickers Bites in the pancake batter.
Drop two or three at a time into your hot oil. Cook about 10 seconds on each side until they’re golden brown but not burned.
I take them out an put them on a paper towel to absorb a bit of the oil and cool before I plate for serving. Top them off with a little powdered sugar or a flavored syrup if you like and BAM! Quick, easy Deep Fried Snickers Bites!
