Cookies are my weakness. I’ve hardly met a cookie I couldn’t at least be friends with. Big ones, small ones, chocolate, peanut butter, you name it, if it’s a cookie I’ll try it. We literally can’t keep enough cookies in the house (which may explain the winter poundage that I’m currently trying to shed). That certainly doesn’t keep us from trying though! I think it’s always fun to turn everyone’s favorite indulgences into the perfect cookie so this time it’s Almond Joy, which hubby love. Make it a cookie and it’s even better! Ingredients
1 cup butter, softened
1 1/2 cups white sugar
1 1/2 cups brown sugar, packed
4 eggs
3 teaspoons vanilla
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
5 cups semi-sweet chocolate chips
4 cups sweetened coconut
2 cups almonds, chopped
Directions
Preheat oven to 375°F.
Lightly grease cookie sheets.
Mix together dry ingredients.
In your mixer mix butter and both sugars Add eggs and vanilla.
Mix in the dry ingredients.
Stir in nuts, chocolate chips, and coconut.
Drop teaspoonfuls onto cookie sheets.
Bake 10-12 minutes or until golden brown.
