I haven’t cooked at home in two months. Seriously, we’ve been so busy and out of town every weekend that there just hasn’t been time to really cook a meal. Between horse shows, weddings, family vacations, and work there has been too much eating out and a few nights of cereal (which is delicious by the way). There are only so many hours in the day and on the few nights we’ve been home, there’s always something else that we need to tend to (animals, property, family) so wasting precious hours in the kitchen just didn’t make sense. Normally I wouldn’t say that because making the time to cook a healthy meal for your family is never a waste of time, but when I say the last couple months have been chaos, I’m not even kidding a little bit!
This last weekend was the first weekend we’ve been home with no major obligations in so long I thought I should probably make something. As you can imagine a shopping trip was in order before I really had anything to cook though….and when I say shopping trip I mean basically re-stocking everything in the fridge and pantry. They were getting pretty darn bare. While we were making our way through the aisles at Walmart (because where else do you go for a major grocery store trip?!), I noticed something that caught my eye – Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread.
I love that it’s a little different with the addition of Jalapeno and it’s naturally sweetened with honey so I feel good that it’s a better for you option to serve my family.
I already had chicken on my shopping list so I thought this would be the perfect addition to kick that chicken up a notch and give the family a little something different so for your dining pleasure, here’s my Four Ingredient Sweet & Spicy Glazed Chicken.
Ingredients
(4) Chicken Thighs
5 tbsp. Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread
Montreal Chicken Seasoning Rub
1 Lime
Non-Stick Cooking Spray
Directions
Preheat Oven to 375 degrees. Rub chicken thighs with seasoning rub.
Spray oven safe dish with non-stick cooking spray and bake chicken thighs for 30 min.
While chicken is baking mix 5 tbsp. Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread and juice from 1/2 a lime in a small bowl to create your glaze.
When oven timer goes off remove dish, spread glaze over top of chicken thighs and place back in the oven for an additional 15 minutes or until cooked through.
Pair with rice or your favorite veggies and you’ve got a quick, easy, and delicious family meal.
