Easy Caprese Chicken Bake

Let’s talk about comfort food. You know the dishes that have been passed down for generations, that remind you of your childhood, that make you feel better when you’ve just had enough. I think pretty much everyone has a few of those dishes in their life right? As delicious as those foods are though, they’re not always the healthiest right? But why can’t something be delicious and comforting and healthier? For me comfort foods come in the form of baked dishes, usually creamy or rich or with lots of cheese. (Sounds perfect right?!) By being a little more selective in our ingredients though, we can keep some of those attributes that make comfort foods what they are, yet not the death of your healthy diet in one sitting.

Easy Caprese Chicken Bake

 

 

That’s why for my delicious (and yes, cheesy and comforting) Caprese Chicken Bake, I’m using Foster Farms Simply Raised Chicken which is raised on a 100% vegetarian diet with no antibiotics ever. Healthy, fresh, and antibiotic free makes me feel confident about feeding it to myself, my family, and anyone else who may need a little extra comfort. By making better decisions about what goes into our favorite dishes, comfort foods can be an everyday meal if we want. As a West Coast girl I also love that fact that Foster Farms Simply Raised is locally grown meaning it’s super fresh when we pick it up at the market. Finally, we don’t have to give up taste for a healthier option and I find that to be pretty comforting.

 

If you and your family love a good cheesy chicken dish like I do, you’re going to love this super easy Caprese Chicken Bake!

Caprese Chicken Bake

Ingredients

olive oil

2-3 tomatoes on the vine, sliced

Salt & Pepper

Balsamic Vinegar

4 -6 Foster Farms Simply Raised Chicken breast fillets (Approx. 2 lbs)

4 – 5 ounces mozzarella cheese, sliced

a handful of fresh basil leaves, torn or chopped

Caprese Chicken Bake Ingredients

Directions

Pre-heat oven to 400 degrees. While oven is heating, grease baking dish with olive oil, place chicken into baking dish in a single layer and season with salt and pepper.

Salt & Pepper Chicken In Baking Dish

Once oven is heated, place baking dish with seasoned chicken in oven and bake for 20 minutes. While the chicken is baking slice the mozzarella cheese and tomatoes.

Remove chicken from oven after 20 minutes and place a layer of mozzarella cheese slices on top of chicken. Place layer of sliced tomatoes on top of cheese. Add some basil leaves and drizzle balsamic vinegar over top of everything.

Layer Mozzarealla & Tomato Caprese Chicken

Place back into oven for about 10 minutes or until cheese is thoroughly melted. Remove from oven and serve with your favorite side dishes.
