It’s no secret I’m trying super hard to be healthier lately. Of course I need to drop a few pounds, but just as important, I need to maintain a healthier lifestyle overall. Since food is a huge part of a persons health, I’ve been trying to pay more attention to where my food comes from. We live in an agricultural community to it’s super easy to buy fresh and local with the most of our fruits and veggies. The meats though, those are a little tougher unless dining on wild game, which we do but not 100% of the time. When it comes to supermarket options for chicken, which is a large part of our meat consumption, I’ve found Foster Farms Simply Raised fresh chicken which is locally grown in California and the Pacific Northwest with no antibiotics ever. For me that’s exciting because it’s a name I’ve known to mean quality for years and now it seems their goals are in line with mine as far as my families nutrition. That’s pretty amazing right?

Ranch Chicken & Broccoli Skillet
INGREDIENTS
4 Boneless Foster Farms Simply Raised chicken breast fillets
3 cups cut Broccoli
1 cup cut Carrots
1/2 cup grated Parmesan cheese
4 tbsp. of Ranch seasoning for the chicken
1 Packet of Ranch seasoning (1/2 for the chicken and 1/2 for the veggies)
Salt and pepper
5 tbsp. Olive oil
2 eggs
DIRECTIONS
Place your eggs in a medium sized bowl and mix to combine. In a separate dish add your grated Parmesan and 1/2 of the ranch seasoning and stir to combine.
Take each of your chicken breasts and dip in the eggs then the Parmesan mix place on a wax paper lined baking pan. Make sure to have the chicken evenly coated and place in your refrigerator for 1 hour.
Using a large cast iron pan ( or skillet ) add 3 tbsp. of olive oil and turn your heat on to high.
Add your chicken to your cast iron pan turning your chicken every 8 minutes for evenly cooking. Cook for 16 minutes.
Remove the chicken from the pan and set to the side
Now add your your 2 tbsp. of olive oil to the cast iron pan and add your vegetables. Season your vegetables with salt and pepper and the remainder of the ranch seasoning cook for 10 minutes stirring often.
Place your chicken back in your cast iron and heat your oven to 350 degrees. Place the chicken entree in the oven for 15 minutes and enjoy
