Guess what’s coming up next week? Cinco de Mayo!!! As a food lover, this particular day of the year is probably one of my faves. I understand there is a greater significance to a large portion of the population than just awesome tamales and I don’t want to downplay that, but let’s not overlook the deliciousness that is about to be served up! Of all the potlucks that my office throws, our Cinco de Mayo shindig is probably everyone’s absolute favorite. The last couple of years have been so busy that I’ve partaken in the eating, but I’ve been a bad potluck attendee, so this year, these bad boys will be on the dessert menu.
Mexican Chocolate Cupcakes
Ingredients
1 box triple chocolate cake mix (yes, box mix is 100% acceptable!)
1 1/4 C whole milk
1/2 C softened butter
3 large eggs
1 tsp cinnamon
1 tsp chili powder
Directions
Preheat oven to 350 per directions on box. Combine all ingredients into a medium bowl and mix until combined and thick. Scoop 3/4 into a fiesta style cupcake liner and bake 20 minutes.
Frosting Ingredients
1 C softened unsalted sweet cream butter
1/2 C cocoa powder
2 C powder sugar
1 tsp cinnamon
1 tsp chili powder
3-4 TBS heavy whipping cream.
Frosting Directions
Combine all ingredients into a standing mixing bowl and mix until stiff. If too thin add in 1/4 cup powder sugar; if frosting looks like powder pebbles add in more heavy cream until you have the right consistency. Scoop icing into a star tip pastry bag and pipe onto cooled cupcakes.
