We woke up this morning to our first snow of the season. The inception of winter (we’re skipping fall in the Pacific Northwest evidently) and the realization that the holidays are all but on top of us. We love the holiday season. We love decorating and shopping to find that perfect gift. We love family and friends. We love the fun, festive happiness that permeates the air. And of course, we love the food. It seems like you can’t get away from delicious treats at every turn. Personally, I’m a fan although my waistline is what generally pays the price, but that’s a discussion for another day. (Come talk to me about January or February and we’ll discuss how we’re going to reverse the results of the 4th quarter food intake.)
As much as I love everything about the holidays though, I don’t want to spend the whole time in the kitchen. I want homemade options that are convenient and appeal to everyone but allow me to relax and actually enjoy myself as well. (Now don’t get me wrong, if you love being in the kitchen, more power to you — my appetite loves you, but it’s just not my gig. Not all the time anyway.) Now, that being said, I do love food so you see my dilemma? Over the years though, as we’ve expanded on older family traditions and created our own, one thing that everyone looks forward to is Thanksgiving and Christmas morning brunch. I mean we all need to eat while visiting, playing, and preparing the main meal of the day and this super easy Sausage and Asparagus Crustless Quiche is always a big hit. It’s easy to whip up and it can even be made ahead and frozen if you really want to be ahead of the game!
Sausage & Asparagus Crustless Quiche
Ingredients
1 lb Jimmy Dean® Regular Pork Sausage
1 cup Chopped Asparagus (fresh or canned (drained) if out of season)
3/4 cup Chopped Mushrooms
1 Cup Shredded Cheddar Cheese
6 Large Eggs
1/2 cup Milk
Directions
Pre-Heat oven to 350°. Brown Sausage in medium pan.
Combine Asparagus, mushrooms, cheddar cheese, eggs and milk in medium bowl.
Once sausage is cooked, spread crumbles evenly in bottom of pie dish or 6×6 casserole dish. Pour egg mixture over top of sausage and make sure it is evenly spread over sausage.
Place in oven and cook for 45 minutes. Serve hot or let cool and freeze.
