In my quest to eat a little healthier, but still keep my family happy with tasty vittles at dinner time, I’ve been on the lookout for new side dishes that fit the bill. Usually when having baked butternut squash I just halve it, bake it, and add some butter and brown sugar – delicous, but I thought this time I’d try something different. We went with this garlic parmesan version and let me tell you, it was uh-may-zing!! Super easy to make and definitely something that will be on the menu again in the very near future!
Ingredients
2 tablespoons minced fresh parsley
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1 whole butternut squash, peeled and cut into approx 1-inch cubes
1/3 cup grated Parmesan cheese
Directions
In an ungreased 2-qt. baking dish, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender. Coat with parmesan cheese.
This sounds amazing. I love it and seriously want to make this SOON!
I love all the flavors you used in this recipe. It really, REALLY sounds yummy. I need to pick up a squash now!
We love butternut squash in our house. This looks tasty.
I am not a big squash person but that actually looks worth trying! Thank you for sharing the recipe.
Yum! This sounds like a nice healthy dish! I need to try this !
That sounds super easy to make (if I buy the squash already cut up which of course I would)–and I know I would love the taste. I love butternut squash!
I love squash, but I have yet to try butternut. This looks so good, and I love anything with garlic. I can’t wait to try this!

YUM! This looks like a great dish that I need to definitely find time to serve!
That looks delicious! I love squash, but I’m not very experimental with it. Might try this, minus the parm since I can’t do dairy! (SOB!)
