Last week we went back to school and let me tell you, no matter how much you plan and how prepared you think you are, after a lazy summer with a pretty spontaneous schedule (for the kiddos anyway), it seems like that first week back to school is always a tough one. To add to the pressure for week two, I’m going to be leaving bright and early Wednesday morning for 5 days in Tulsa, OK with my daughter so that leaves hubby and the teenager home alone. I know they can handle it, but I’m a mom so I worry regardless of if it’s warranted or not. Since we’ve been so busy and everything has been so chaotic, I’ve been trying to come up with some food options that are of course easy and filling, but also that can be made ahead and easily warmed up whenever you want. The other day I made these Maple Bacon Pancake Dippers and they definitely fit the bill.
Of course I was already at Target picking up some school supplies (yes after school had started – that’s how on top of things I am this year). Fortunately Target has a little bit of everything so I headed over to the grocery section and grabbed a container of NESTLÉ® NESQUIK®Chocolate Powder, some milk, and the ingredients for the pancake dippers. How did moms stay sane before stores that had a little bit of everything?
Maple Bacon Pancake Dippers
INGREDIENTS
1 lb. of bacon
Pancake Batter of Your Choice
Maple Syrup
DIRECTIONS
Mix your pancake batter per the instructions on the box and set aside. Cook your bacon as usual, cutting each strip in half.
Once your bacon is thoroughly cooked, place a piece in a pan that has been pre-heated on medium heat.
Pour pancake mix on top of bacon and let cook for about a minute, flip and cook other side equally.
Continue until all your dippers are cooked and serve with plenty of maple syrup for dipping.
