Thank you to Minute Rice for sponsoring this post. All opinions and my love easy, delicious meal options is 100% my own.
Wholesome, nutritious, easy, portable…when it comes to food you don’t always get to put all these words together in the same sentence, but I’ve been trying to do just that more and more often. My typical game plan is to make something delicious for dinner, with enough left over that it can be taken or added to something and also take care of my lunch the following day. Doing this keeps me from eating out so much for lunch and making bad food choices, which is exactly what I will do if I don’t have something easy to grab in the mornings as I run out the door. That being said, I need the bulk of my dinner recipes to be relatively quick and easy as well because I simply do not have time to spend two or three hours prepping and making dinner on a regular basis. Occasionally, yes, but on your average Monday or Wednesday after work, before band practice, and all the other stuff I have to tend to, if I can’t make it in 30 minutes to an hour tops, it’s probably not happening in my kitchen.
This week Minute® Ready to Serve Rice and Chicken of the Sea Salmon Pouches have me covered. I pretty much always have Minute Rice in my pantry at any given time because you can basically round out any meal if you have some on hand. Since you can pick it up in so many different varieties including white rice, Brown & Quinoa and Basmati Rice, as well as Whole Grain options of Brown Rice, Brown & Wild Rice and Multi-Grain Medley. Also, there’s Jasmine Rice, White Rice and flavorful mixes. There is totally something for everyone and plenty of ways to try Minute Rice with something new!
Pair that with something from Chicken of the Sea and I think we have the perfect marriage! Chicken of the Sea even has handy dandy pre-seasoned pouches of premium, wild-caught Chicken of the Sea Pink Salmon in one of four tasty flavors: Barbecue, Lemon Pepper, Sweet & Spicy and Sriracha. Yes please! In recognition of National Salmon Day on Oct. 8, 2016, Chicken of the Sea and Minute Ready to Serve Rice have partnered together to make meal-planning easy.
National Salmon Day & Sweepstakes

I mean there’s a day for everything else so why not right? From September 25- October 8, the “Salmon Loves Rice Sweepstakes,” will take place and you can use the hashtag #NationalSalmonDay on your social media platforms to answer salmon trivia question. That gives you a change to win a 7-10-day Alaskan cruise and Chicken of the Sea Flavored Salmon Pouches and Minute® Ready to Serve Rice products. Sounds like a good deal to me! Also be sure to participate on September 27 at 11 a.m. ET in a Twitter party showcasing some fun ways to pair Minute Ready to Serve Rice with Chicken of the Sea Flavored Pouches. We’ll be using the hashtag #SalmonLovesRice during the party as well. Now for the easiest Salmon Patty recipe ever!
Lemon Pepper Salmon Patties
2 Chicken of the Sea Pink Salmon Pouches in Lemon Pepper Flavor
2 Small ( 5 oz) Cans Chicken of the Sea Pink Salmon
1/4 cup Italian Bread Crumbs
Preheat oven to 375.
Open and drain liquid from the cans of salmon and pour meat from cans and both pouches into a mixing bowl and flake with a fork.
Add eggs and breadcrumbs and mix together until all ingredients are well blended.
Spray a muffin tin well with non-stick cooking spray and scoop your salmon mixture into the tin – you should fill about 9 of the slots in the tin about 1/2 in deep. Smooth out your mixture in each slot with the back of a spoon so that it’s evenly distributed.
Place in the oven for 15 minutes or until the top of your patties turn a golden brown color.
Remove from the tin and serve!
As a dinner option I serve these salmon patties with Minute Rice because the fam loves to flavor their rice in various ways. You can also place the patties on slider buns for an easy salmon burger. The best part is that these baked salmon patties are the perfect size to refrigerate and throw in a lunch box with a single serve cup of Minute Rice for and easy lunch the following day. Both Minute Ready to Serve Rice and Chicken of the Sea Flavored Salmon Pouches also make easy go-to lunch options for you or your family as you approach the busy back-to-school season. Easy for mom and nutritious for the family – I call that winning!
