Wholesome, nutritious, easy, portable…when it comes to food you don’t always get to put all these words together in the same sentence, but I’ve been trying to do just that more and more often. My typical game plan is to make something delicious for dinner, with enough left over that it can be taken or added to something and also take care of my lunch the following day. Doing this keeps me from eating out so much for lunch and making bad food choices, which is exactly what I will do if I don’t have something easy to grab in the mornings as I run out the door. That being said, I need the bulk of my dinner recipes to be relatively quick and easy as well because I simply do not have time to spend two or three hours prepping and making dinner on a regular basis. Occasionally, yes, but on your average Monday or Wednesday after work, before band practice, and all the other stuff I have to tend to, if I can’t make it in 30 minutes to an hour tops, it’s probably not happening in my kitchen.

Lemon Pepper Salmon Patties
Ingredients
2 Chicken of the Sea Pink Salmon Pouches in Lemon Pepper Flavor
2 Small ( 5 oz) Cans Chicken of the Sea Pink Salmon
2 eggs
1/4 cup Italian Bread Crumbs
Directions
Preheat oven to 375.
Open and drain liquid from the cans of salmon and pour meat from cans and both pouches into a mixing bowl and flake with a fork.
Add eggs and breadcrumbs and mix together until all ingredients are well blended.
Spray a muffin tin well with non-stick cooking spray and scoop your salmon mixture into the tin – you should fill about 9 of the slots in the tin about 1/2 in deep. Smooth out your mixture in each slot with the back of a spoon so that it’s evenly distributed.
Place in the oven for 15 minutes or until the top of your patties turn a golden brown color.
Remove from the tin and serve!
As a dinner option I serve these salmon patties with Minute Rice because the fam loves to flavor their rice in various ways. You can also place the patties on slider buns for an easy salmon burger. The best part is that these baked salmon patties are the perfect size to refrigerate and throw in a lunch box with a single serve cup of Minute Rice for and easy lunch the following day. However, now I want to try this out with some gluten free breadcrumbs. I’ll be sure to include some instant brown rice on the side 😀

Less calories and better for the waist line. I love lemons so this is a perfect dish. Your pictures are great
