Tis the season of bowl games in the football world and that means rivalries, parties, and some killer food spreads. I’ll admit that there was a time, many moons ago, that I wasn’t a big football fan but I’ve always been a big football food fan. Now that has changed somewhat and I definitely follow the game itself more, but win or lose, my heart will always be with the snack table.
One of my favorite places to pick up my game day snacks is Albertson’s. They always have everything I need for the perfect spread including staples like RITZ® Crackers and Coca-Cola.
Since winter brings cold weather and lots of snow in my neck of the woods, I want to offer my guests some comfort foods at this seasons game day parties. What’s a better comfort food than homemade Mac & Cheese? Exactly…nothing! Since bowls of Mac & Cheese isn’t really the best finger food, I decided on these adorable yet delicious Baked Mac & Cheese Bites. Super easy to make, but they offer a big taste. Of course there’s nothing better to wash it all down with than an ice cold Coca-Cola. Touchdown for the kitchen team!
To make the perfect game day appetizer, all you need is:
12 oz Cooked elbow macaroni
3 c. shredded cheddar cheese
1 lg. egg
1/2 c. milk
Italian Panko bread crumbs
salted butter
Directions
Heat oven to 400 degrees and grease mini muffin tin with salted butter.
Cook elbow macaroni per instructions on box and drain.
In separate bowl, mix egg and milk together.
Combine 3 cups shredded cheese with cooked macaroni until cheese is melted and add egg and milk mixture until combined thoroughly.
Scoop mixture into greased mini muffin tin and sprinklie bread crumbs over top.
Cook for 20 minutes. Let cool for 5 minutes and the most important part – place each mac & cheese bite on a RITZ® Cracker for the perfect creamy and crunchy combination.

January 21, 2016 at 2:48 pmi won’t be watching any sports games. I do however ALWAYS have a box or two of Ritz crackers in my apartment. I was happy when they came out with the lower fat and salt ones. I actually eat one of the ind packs inside that big box at one sitting!! Nac and cheese would make a gret topping for them.
