This summer seems like it’s flown by so far. There’s been so much going on and so many places we’ve gone. We’ve visited family in Seattle, and friends in Portland. We’ve hit up some amusement parks in Idaho and been to horse shows a plenty. Some of our very favorite things though…the trips that summer wouldn’t be complete without, camping and a visit to the beach! We spent 4th of July weekend this year in Seaside, OR and let me tell you, the beach was beautiful and the weather perfect.
The kids played, mom shopped, and fireworks are still legal there so of course we had to partake in the shenanigans. We met up with some friends who were also in town for dinner one evening and let me tell you, leaving to come home with the sun shining and the waveS crashing was tough.

We did get to enjoy one of our favorite seafood dishes while we were there – some grilled oysters. Now I know oyster shooters are popular, but this girl can’t do the raw thing. Grill them up with some garlic and butter and some El Yucateco® Green and Red Sauces and you’ve got something delicious on your hands.
Fact: I’m a hot sauce fanatic – I love it on pretty much anything. I’ve even been known to carry small bottles in my purse or luggage just in case. I carry mine in my purse and take it camping, to a friends BBQ and to my favorite restaurant, but back to those oysters – they’re super easy to make so if you want to impress your friends, just go to your favorite grocer, pick up some El Yucateco® (they’re available pretty much everywhere but I usually pick mine up at Fiesta Foods), and then follow my lead here and end up with the best spicy grilled oysters ever!
Grilled Oysters
Ingredients
2 doz. oysters (about 6 per person because not every single one will open up)
1/2 cup butter
1 tsp. garlic salt
1 tsp. parsley flakes
2 tbsp. El Yucateco® Green or Red Habanero Sauce
( The red sauce is made with fresh red habanero peppers, tomato, and select spices and seasonings and it is the perfect all purpose sauce for any dish)
Directions
While you’re getting the grill heated up. Take a small mixing bowl and mix your butter, garlic, hot sauce and parsley flakes together. Softened or room temperature butter will be best to mix it all together).
Once the grill has heated up, start throwing your oysters on there. As they heat up they’ll start to pop open – those are the good ones. If the shells don’t open those are the ones you’ll want to pass on because they’re likely not any good.
As the shells begin to open you’ll want to take an oyster knife (or any strong knife will do) and pry the top shell off. (I suggest wearing a leather glove on the hand you’ll be holding the oysters in because they’ll be HOT!). Once the top shells have been removed, place the oysters back on the grill and brush the butter and hot sauce mixture over each of them and allow them to cook for 3-5 more minutes – until the buttery liquid looks like its boiling. Then feel free to eat them right off the grill or in my case, add a little more El Yucateco® Red Chile Habanero sauce and then consume.
