What do you do with all of those Thanksgiving leftovers? Turkey sandwiches are great for a day or two but those get old and then what? You don’t want to waste all that good meat so how about something easy to throw together, warm and comforting, like soup? How about Turkey Apple Soup, a delicious treat for your taste buds? Trust me on this – it’s going to be awesome!
Turkey Apple Soup
Ingredients
2 C apple juice
1 can chicken stock
½ C diced peeled apples
1 can peas, drained and rinsed
1 can sliced carrots, drained and rinsed
1 can corn, drained and rinsed
½ Spanish onion, diced
1/ 2 jar of turkey gravy
2 tsp ginger
salt and pepper to taste
2 C cooked dark turkey, minced
1 package rotteli pasta
non-stick cooking spray
1 can chicken stock
½ C diced peeled apples
1 can peas, drained and rinsed
1 can sliced carrots, drained and rinsed
1 can corn, drained and rinsed
½ Spanish onion, diced
1/ 2 jar of turkey gravy
2 tsp ginger
salt and pepper to taste
2 C cooked dark turkey, minced
1 package rotteli pasta
non-stick cooking spray
Bread bowls to serve in
Now, Let’s make soup!
Spray your crock pot with the non-stick cooking spray. Turn slow cooker on low and add the apple juice and chicken stock.
Add all remaining ingredients EXCEPT the pasta – (this will be added later so it does not become mushy).
Stir the ingredients well and cook on low for 5-6 hours.
About an hour before serving add the pasta, stirring to mix well and continue to heat on low.
Cut the top out of your bread bowls if needed and spoon your soup in and serve.
